Jalapeno Rabbit Poppers

Prep time: 10-15 minutes

Cook time: 14 minutes

Servings: 4-8 (50 poppers) 

Poppers are a well-known appetizer originated in Texas that commonly utilize dove meat. For this recipe, our goal was to add a modern twist on a traditional dish by using an Air Fryer for quick and easy cooking without sacrificing taste or appearance. We also found that rabbit meat adds a stellar complimentary taste to the flavors that the poppers embody from the cream cheese, peppers, and bacon.

 

Ingredients:

●      25 jalapeno peppers

●      16 oz. cream cheese

●      2 packs of bacon

●      ~ 1-2 pounds meat of choice (we used rabbit)

 

Directions:

●      Cut jalapeno peppers in half and remove all seeds (use gloves to avoid burning hands)

●      Rinse halves and pat dry with paper towel, set aside

●      Slice meat into ~ ¼ inch thick slices that are ~ the length of the jalapeno pepper halves

●      Fill each jalapeno pepper half with cream cheese, one piece of meat, and wrap with ½ slice of bacon

●      Repeat for all halves

●      Place filled/wrapped jalapeno peppers in Air Fryer

●      Cook for 14 minutes on 400 degrees

●      Enjoy!
