With the zucchini from our garden beginning to EXPLODE, we are always looking for new and delicious recipes to incorporate one of our favorite vegetables. With this recipe, you will find a quick, nutritious, and unique way to put a twist on a food that we all love – without having to feel guilty eating it!
Ingredients:
For the base:

5 cups shredded zucchini

2 eggs
-
1/2 cup parmesan cheese

1/2 cup breadcrumbs

1 onion
-
2 Tbsp. garlic powder
-
1 tsp. salt
-
1 tsp. pepper
For the sauce/toppings:

6 cups crushed tomatoes
-
1 Tbsp. basil
-
1 Tbsp. cilantro
-
1/2 Tbsp. garlic powder
-
1 cup shredded cheese
-
12 slices venison pepperoni (+ any pizza toppings you prefer!)
Directions:

Preheat oven to 400 degrees
-
Shred zucchini with grater and ring out over sink to remove majority of moisture
-
Add shredded zucchini, eggs, parmesan cheese, breadcrumbs, onion (chopped), garlic powder, salt, and pepper to bowl and mix well

Line bottom of greased 9×13” dish with mixture, spreading evenly
-
Place in oven and bake for 30 minutes until edges begin to brown

While base is baking, mix crushed tomatoes, basic, cilantro, and garlic bowl in a bowl
-
Remove base from over and spread sauce mixture on top of zucchini mixture base, top with pepperoni and any other desired pizza toppings

Return to oven and bake for additional 5 minutes until cheese it melted

Remove from oven, slice, and enjoy!
