If you garden and grow zucchini, you know that a healthy zucchini plant will yield many zucchini throughout the growing season. With garden season right around the corner, we wanted to give you a delicious recipe to use your homegrown zucchini with!

Bake time: 16-18 minutes

Supplies:

Mixing bowl

Baking sheet
Ingredients:

1 cup shredded zucchini
-
1 clove garlic, minced
-
1/3 cup breadcrumbs
-
1/4 cup grated parmesan cheese
-
1 egg
-
2 Tbsp. chives
-
1 Tbsp. parsley
-
1 tsp. basil
-
1 tsp. oregano
-
pinch of salt & pepper

marinara sauce for dipping
Directions:

Preheat oven to 400 degrees. Line baking sheet with foil and lightly spray with nonstick spray.

Use a box grater to grater to grate the zucchini. Dab with towel to remove as much moisture as you can.

Add shredded zucchini, garlic, egg, breadcrumbs, parmesan, chives, parsley, basil, oregano, and salt and pepper into mixing bowl. Mix well to combine.

Shape mixture into tablespoon sized balls and place on baking sheet.

Bake for 16-18 minutes until golden brown. Serve with marinara sauce!
