If you garden and grow zucchini, you know that a healthy zucchini plant will yield many zucchini throughout the growing season. With garden season right around the corner, we wanted to give you a delicious recipe to use your homegrown zucchini with!

Prep time: 15 minutes

Bake time: 16-18 minutes

  • Mixing bowl

  • Baking sheet


  • 1 cup shredded zucchini

  • 1 clove garlic, minced

  • 1/3 cup breadcrumbs

  • 1/4 cup grated parmesan cheese

  • 1 egg

  • 2 Tbsp. chives

  • 1 Tbsp. parsley

  • 1 tsp. basil

  • 1 tsp. oregano

  • pinch of salt & pepper

  • marinara sauce for dipping


  • Preheat oven to 400 degrees. Line baking sheet with foil and lightly spray with nonstick spray.

  • Use a box grater to grater to grate the zucchini. Dab with towel to remove as much moisture as you can.

  • Add shredded zucchini, garlic, egg, breadcrumbs, parmesan, chives, parsley, basil, oregano, and salt and pepper into mixing bowl. Mix well to combine.

  • Shape mixture into tablespoon sized balls and place on baking sheet.

  • Bake for 16-18 minutes until golden brown. Serve with marinara sauce!
