Yellow Squash Flatbread

One of our absolute favorite meals to make, this recipe combines some of the freshest ingredients and tastes all into one! Don’t let the simplicity of this recipe fool you – there are layers upon layers of taste in every bite!

Prep time: 15 minutes

Cook Time: 15 minutes

Servings: 2-4

Ingredients:

  • 2 yellow squash

  • 2 cloves minced garlic

  • 2 Tbsp. olive oil

  • salt & pepper (dash)

  • 1/2 lemon

  • 6 oz. grape tomatoes

  • 4 flatbreads

  • 8 oz. fresh mozzarella

  • 6 fresh basil leaves

  • 2 Tbsp. honey

  • 2 Tbsp. balsamic

Directions:

  • Preheat oven to 400 degrees.

  • Heat olive oil in pain.

  • Slice and halve yellow squash into “half moon” shapes and add to hot oil with minced garlic – cook until lightly brown, then season with dash salt and pepper.

  • Halve grape tomatoes and lemon, dice basil leaves, and tear/cut mozzarella into small pieces.

  • Spray baking sheet with non-stick spray and place flatbreads on sheet.

  • Top with pieces of mozzarella, tomatoes, basil, and finish with squash mixture.

  • Place in oven and bake until cheese is melted and edges of flatbreads are slightly browned (~10-15 minutes).

  • When done baking, remove from oven and evenly top with honey and balsamic by lightly dripping off of edge of spoon.

  • Finish with a splash of lemon by squeezing over each flatbread.

  • Enjoy!
