
For the last few years, we have been experimenting with making our own healthy snacks. Protein bars are good for quick energy, but they can be expensive and full of binders, sweeteners, and poor quality proteins. So we started making our own.
Ryan takes them into the backcountry, and snacks on them throughout the day. We didn’t calculate the calories, but guaranteed it’s a lot! Perfect for fueling you up the mountain!
1 cup shredded unsulfured coconut
5 cups organic rolled oats
5 scoops chocolate or vanilla protein powder
1/4 -1/2 cup agave
2 cups of peanut butter (not on Gut Restoration program) or almond butter
1 can coconut milk (from a can, not in the carton)-optional
1 tbsp Vanilla Extract
1 tbsp Cinnamon
Mix all ingredients together and put in refrigerator overnight. Cut into squares and store.
These bars do have some weight, but they are good for giving you the calories, protein, and healthy fats you need to get through a hard day of hunting or hiking.
They also make great snacks for busy kids!
