Squash, Bacon, & Goat Cheese Frittata

Frittata is an egg-based Italian dish that is similar to an omelet or quiche. Often times, frittatas are made with variations of meats, cheeses, and vegetables, and are cooked in a skillet of some kind, and are perfect for any meal.

Prep time: 10 minutes

Cook time: 30 minutes

Servings: ~6

Ingredients:

  • 6 slices bacon, diced

  • 1 small onion, diced

  • 4 cups raw kale, hard stems removed

  • 2 cups cubed and cooked butternut squash

  • 8 eggs

  • 1 tsp. salt

  • pepper to taste

  • 4 oz. goat cheese

Directions:

  • Preheat oven to 450 degrees.

  • Place bacon in an oven-safe skillet, preferably cast iron. Render bacon in skillet until just beginning to crisp, leaving fat in pan.

  • Add onion to the skillet and cook until soft and translucent.

  • Add kale to the pan and toss around for several minutes until softened/tender.

  • Add squash into pan and toss around until mixed well.

  • Crack the eggs into a bowl and whisk until scrambled well. Pour the eggs into the skillet with other ingredients.

  • Crumble goat cheese on top and place the skillet into the oven for 10-15 minutes, until puffed up and golden brown.

  • Remove from oven and enjoy!
