Frittata is an egg-based Italian dish that is similar to an omelet or quiche. Often times, frittatas are made with variations of meats, cheeses, and vegetables, and are cooked in a skillet of some kind, and are perfect for any meal.

Ingredients:

6 slices bacon, diced

1 small onion, diced

4 cups raw kale, hard stems removed

2 cups cubed and cooked butternut squash

8 eggs

1 tsp. salt

pepper to taste

4 oz. goat cheese
Directions:

Preheat oven to 450 degrees.

Place bacon in an oven-safe skillet, preferably cast iron. Render bacon in skillet until just beginning to crisp, leaving fat in pan.

Add onion to the skillet and cook until soft and translucent.

Add kale to the pan and toss around for several minutes until softened/tender.

Add squash into pan and toss around until mixed well.

Crack the eggs into a bowl and whisk until scrambled well. Pour the eggs into the skillet with other ingredients.

Crumble goat cheese on top and place the skillet into the oven for 10-15 minutes, until puffed up and golden brown.

Remove from oven and enjoy!
