Ingredients:

  • 1.5 lbs. shrimp peeled and deveined

  • 1 yellow bell pepper, sliced thin

  • 1 red bell pepper, sliced thin

  • 1 orange bell pepper, sliced thin

  • 1 onion, sliced

  • 2 Tbsp. olive oil

  • 1 tsp. salt

  • 1 tsp. pepper

  • 2 tsp. chili powder

  • 1/2 tsp. garlic powder

  • 1/2 tsp. onion powder

  • 1/2 tsp. cumin

  • 1/2 tsp. paprika

  • Tortillas

Directions:

  • Preheat oven to 450 degrees.

  • In a large bowl, combine bell pepper, onion, shrimp, olive oil, salt/pepper, and spices.

  • Toss and combine thoroughly.

  • Spray baking sheet with nonstick spray and spread mixture evenly onto sheet pan.

  • Bake at 450 degrees for 10 minutes. Then turn oven to broil and bake for additional 2 minutes.

  • Remove from oven and put into tortillas – add your favorite toppings (cheese, sour cream, etc.), and enjoy!
