Ingredients:

1.5 lbs. shrimp peeled and deveined

1 yellow bell pepper, sliced thin

1 red bell pepper, sliced thin

1 orange bell pepper, sliced thin

1 onion, sliced

2 Tbsp. olive oil

1 tsp. salt
-
1 tsp. pepper

2 tsp. chili powder
-
1/2 tsp. garlic powder

1/2 tsp. onion powder

1/2 tsp. cumin
-
1/2 tsp. paprika

Tortillas
Directions:

Preheat oven to 450 degrees.

In a large bowl, combine bell pepper, onion, shrimp, olive oil, salt/pepper, and spices.

Toss and combine thoroughly.

Spray baking sheet with nonstick spray and spread mixture evenly onto sheet pan.

Bake at 450 degrees for 10 minutes. Then turn oven to broil and bake for additional 2 minutes.

Remove from oven and put into tortillas – add your favorite toppings (cheese, sour cream, etc.), and enjoy!
