Wild turkey is notoriously known for being dry and somewhat tough. Our goal with this recipe was to create a simple way to introduce moisture to the wild turkey meat through the use of apple juice in a pressure cooker. The apple juice also adds a component of sweetness, while the spices supply the savory.
Ingredients:
· 1 wild turkey breast / 2 wild turkey legs
· Olive oil
· Apple juice
· Paprika
· Italian seasoning
· 1 tsp salt
· 1 tsp pepper
Directions for Turkey Breast:
· Liberally rub turkey breast with olive oil on both sides so that it is well covered (~ 4 tbsp.)
· Sprinkle breast with paprika so that it is well covered and little pink from the breast is showing through (~3-4 tbsp.)
· Sprinkle with 1 tbsp. Italian seasoning
· Finish with 1 tsp. salt and 1 tsp pepper
· Prepare Instant Pot and place breast inside
· Dump 4 cups of apple juice into the bottom of the inner bowl
· Set Instant Pot to “pressure cook”
· Cook for 20 minutes
· Remove from Instant Pot and pair with side dish (we used sweet potatoes) and ENJOY!

· Sprinkle with 1/2 tbsp Italian seasoning
· Finish with 1 tsp salt and 1 tsp pepper
· Prepare Instant Pot and place breast inside
· Dump 2 cups of apple juice into the bottom of the inner bowl
· Set Instant Pot to “pressure cook”
· Cook for 10 minutes
· Remove from Instant Pot and pair with side dish (we used sweet potatoes) and ENJOY!
