Peaches & Goat Cheese Bruschetta

The weather is finally breaking and spring is here! What better way to celebrate the new season than by with a sweet recipe that is packed with warm-weather flavor. This recipe combines peaches, goat cheese, honey, and spices/herbs to make a delicious and unique bruschetta that we are sure you will enjoy!

Prep time: 15 minutes

Cook time: 15 minutes

Servings: 8-10+

Supplies:

  • Baking sheet

Ingredients:

  • 1 baguette, sliced into 1/2 inch slices

  • approx. 3 Tbsp. olive oil

  • 5 oz. goat cheese

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 3 ripe peaches, sliced into wedges

  • 1 tsp. basil

  • 2 tsp. thyme

  • 1 tsp. honey

  • additional honey for topping

Directions

  • Preheat oven to 400 degrees .

  • Brush sliced baguette with olive oil on both sides, then place on baking sheet.

  • Bake for 10 minutes, or until lightly brown and crisp.

  • Place goat cheese into bowl and into microwave for approximately 15 seconds so it is just barely soft enough to easily combine with a fork.

  • Add salt, pepper, thyme, and 1 tablespoon of honey into bowl with goat cheese. Combine well.

  • When baguette is done browning, remove from oven and assemble bruschetta by spreading some of the goat cheese mixture on each bruschetta and top with a peach wedge.

  • Garnish by sprinkling some basil on top of each wedge and drizzling with honey.
