We have always been lovers of key lime pie, especially when taking our annual trips to Florida. In browsing for new desserts to try, we stumbled upon this key lime pie lasagna recipe and decided to try it out for a party that we hosted to kick-off spring turkey season – and it was a HUGE hit! After tasting this unique spin-off of a popular recipe, we knew that we had to share it with you, and hope that you enjoy as much as we did.

Ingredients:
For Crust:

1 cup flour

2 Tbsp. sugar
-
1/2 cup butter, melted

1/2 cup macadamia nuts, chopped finely (can also use cashews or pecans)
For cheesecake layer:

6 oz. cream cheese, softened

2/3 cup powdered sugar
-
2/3 cup whipped topping
-
1/2 tsp. vanilla
For key lime layer:
-
2 Tbsp. cornstarch
-
3/4 cup key lime juice
-
3/4 cup sugar
-
4 egg yolks, slightly beaten
-
5 Tbsp. butter
-
green food coloring
-
1 1/2 cup whipped topping
For topping:
-
1 cup whipped topping
-
1/3 cup nuts, chopped
Directions:

Preheat oven to 350 degrees and spray the bottom on 9×13 baking dish with nonstick spray.

In a mixing bowl, combine ingredients for crust and stir until well-combined and crumbly, then press into bottom of 9×13 baking dish. Bake for 20 minutes, remove from oven, and allow to cool completely.

Mix cream cheese and powdered sugar until smooth and creamy. Fold in 1 cup whipped topping and 1/2 tsp. vanilla and spread evenly over cooled crust. Place in fridge.

In medium saucepan, stir together sugar and corn starch, then key lime juice and slightly-beaten egg yolks, then add butter and bring mixture to a controlled simmer over medium-low heat stirring almost constantly until thickened (so that it can coat the back of a metal spoon).

Remove mixture from heat, cover with foil and place in refrigerator for 2 hours.

When key lime custard is cooled completely, add a few drops of green food coloring and mix well. Then, stir in 1 1/2 cup whipped topping and spread onto cheesecake layer.

Top with 1 cup whipped topping and sprinkle chopped nuts. Set in fridge for at least 4-5 hours, or ideally, overnight.
