As a teenager my stepdad used to cook an elaborate meal that we called Food. It consisted of Top Ramen noodles, a fried egg, a buffalo patty, and salsa. Simple, and inexpensive this was a meal that we enjoyed quite frequently, and when we heard “Food” was on the menu we knew exactly what was for dinner.
This recipe is a replica of Food, with a much healthier spin. You can use anything really for food- veggies, meat, eggs, noodles, rice, quinoa- whatever you have that can be put together and enjoyed!

To make 4 servings:

The daily StHealthy Garden harvest

1 cup of organic quinoa, cooked.
-
4 cups greens of choice- collards, chard, kale chopped
-
I clove garlic, chopped
-
2 cups green cabbage.
-
1 tbsp coconut oil.
-
4 eggs, each fried separately.
-
2 tbsp extra virgin olive oil (EVOO)
-
Italian spice mix as needed
-
sea salt as needed
-
roasted pickled peppers -find recipe in the StHealthy Dehydration and Canning Guide

Meat of choice (optional)
Directions:

Rinse quinoa and bring 2 cups of water to a boil. At boiling add 1 cup quinoa and simmer for 20-25 minutes, or until all water is absorbed.

While quinoa is cooking, add 1 tbsp coconut oil to sautee pan, along with chopped greens and cabbage. Sautee until soft.

When quinoa is done, add 1/4-1/2 cup quinoa to bowl, then add sautéed veggies and 1/2 tsp (or more if you like!) EVOO.

Fry egg, then top with egg, italian spices, salt, and pickled peppers.

If you are adding a meat patty, lay it under the egg.

You can add any other spices or veggies!

Mix all tougher and enjoy this “Food” !
