With garden season in full swing, we are all looking for a delicious recipe to utilize our harvests! With this pasta recipe, you will have thee opportunity to use your garden zucchini and tomato, and even make your own homemade pasta like we did to add some additional taste and fun!


  • 4 medium zucchini

  • 4 medium tomatoes

  • 1 pound pasta (we used homemade egg noodles)

  • 1 onion

  • 2 Tbsp. olive oil

  • 2 Tbsp. basil

  • 1 Tbsp. cilantro

  • 2 cups pasta sauce

  • 1/4 cup water


  • Slice zucchini into halves, tomatoes into cubes, and onions into small slices

  • Heat 2 olive olive in pan and add zucchini, tomato, and onion – cook on medium heat until vegetables begin to soften

  • In a pot, bring water to a boil and cook pasta to desired tenderness

  • Once vegetables has softened, add pasta sauce, water, basil, and cilantro to vegetable mixture – combine well

  • Strain pasta, plate, and top with sauce/vegetable mixture

  • Enjoy!
