If there is a food type that is our favorite, we would have to choose breakfast food. Casserole bakes are great for breakfast because they are packed with nutrition, keep you feeling full, are easy to make, and last several days. This oatmeal bake, in particular, also works great as a snack for the mid-morning or even in the afternoon. We hope you enjoy this simple, nutritious, and wholesome oatmeal bake, perfect for the entire family.

Cook Time: 50 minutes

Servings: 8+

Supplies:

  • 2 mixing bowls

  • Baking dish (either 11×7 or 8×10)

Ingredients:

  • 3 cups oats

  • 1/2 cup honey

  • 2 tsp baking powder

  • 1 tsp salt

  • 2 tsp cinnamon

  • 1 3/4 cup almond milk

  • 3 eggs

  • 1/2 cup coconut oil, melted

  • 1/2 cup fresh or frozen cranberries, plus an extra handful to sprinkle on top

  • 1 apple, chopped

  • 1/4 cup silvered almonds

Directions:

  • Preheat oven to 350 degrees.

  • In large mixing bowl, mix oats, honey, baking powder, salt, and cinnamon.

  • In a separate bowl, beat eggs, then add almond milk and coconut oil.

  • Stir in the oat mixture to the egg mixture, and combine well.

  • Fold in apple and cranberries, saving a handful of cranberries to sprinkle on the top.

  • Sprinkle silvered almonds and remaining cranberries on top.

  • Pour into ungreased baking dish and cook for 50 minutes.

  • Plate and enjoy!
