2 mixing bowls

Baking dish (either 11×7 or 8×10)
Ingredients:

3 cups oats
-
1/2 cup honey
-
2 tsp baking powder
-
1 tsp salt

2 tsp cinnamon

1 3/4 cup almond milk

3 eggs
-
1/2 cup coconut oil, melted

1/2 cup fresh or frozen cranberries, plus an extra handful to sprinkle on top

1 apple, chopped

1/4 cup silvered almonds
Directions:

Preheat oven to 350 degrees.

In large mixing bowl, mix oats, honey, baking powder, salt, and cinnamon.

In a separate bowl, beat eggs, then add almond milk and coconut oil.

Stir in the oat mixture to the egg mixture, and combine well.

Fold in apple and cranberries, saving a handful of cranberries to sprinkle on the top.

Sprinkle silvered almonds and remaining cranberries on top.

Pour into ungreased baking dish and cook for 50 minutes.
