It can sometimes be difficult to think of simple and tasty sides to pair with wildgame meat. Although we usually pair veggies or grains like rice or quinoa with our wildgame meat, we are sometimes in the mood for something different – and that is where the idea for these fritters came from. This recipe combines carbohydrates and vegetables for a nice change in side that pairs well with any dish, including wildgame!

Ingredients:

1/2 cup all-purpose flour

1 egg
-
1/4 cup water

1 tsp. baking powder

1 Tbsp. olive oil

1 cup corn (fresh or canned)

1 medium bell pepper, diced

3 Tbsp. chives
-
1 Tsp. parsley
-
1/2 tsp. salt

1/2 tsp. pepper

olive oil for frying
Directions

Prepare batter by whisking together flour, baking powder, egg, and water in a mixing bowl. When batter becomes smooth, add olive oil, salt, and pepper. Mix well.

Add corn, bell pepper, chives, and parsley to the batter, and mix well.

Heat large frying pan and add 3 tablespoons of olive oil.

When olive oil heats, add 1/4 cup of batter per fritter to pan.

Cook fritters for 3-4 minutes on each side, until golden brown.

Plate and enjoy!
