Ingredients:

6 oz. boxed stuffing mix

1 stick butter, melted

4 cups zucchini, diced

3 boneless/skinless chicken breasts, cooked and diced

10.5 oz. canned cream of chicken soup

1/2 onion, diced

1/2 cup sour cream
Directions:

Preheat oven to 350 degrees.

In a large bowl, combine stuffing mix and melted butter. Set aside 1/2 cup of the mixture to use for topping later.

Add zucchini, cooked chicken, cream of chicken soup, onion, and sour cream to the stuffing in the large bowl. Mix well.

Spread zucchini mixture evenly into a 9×13 baking dish, sprayed with nonstick spray.

Sprinkle reserved stuffing mix on top and bake, uncovered, for 45 minutes, or until cooked through and top is golden brown.
