  • 6 oz. boxed stuffing mix

  • 1 stick butter, melted

  • 4 cups zucchini, diced

  • 3 boneless/skinless chicken breasts, cooked and diced

  • 10.5 oz. canned cream of chicken soup

  • 1/2 onion, diced

  • 1/2 cup sour cream


  • Preheat oven to 350 degrees.

  • In a large bowl, combine stuffing mix and melted butter. Set aside 1/2 cup of the mixture to use for topping later.

  • Add zucchini, cooked chicken, cream of chicken soup, onion, and sour cream to the stuffing in the large bowl. Mix well.

  • Spread zucchini mixture evenly into a 9×13 baking dish, sprayed with nonstick spray.

  • Sprinkle reserved stuffing mix on top and bake, uncovered, for 45 minutes, or until cooked through and top is golden brown.
