Coming across fields of blackberry bushes on our farm this year, we knew that we had to utilize them as much as possible. When considering which meat to pair them with, duck breast immediately came to mind with its smooth and high-quality flavors. Enjoy this recipe with its hint of sweetness and earth that we are certain will quickly become a favorite!
Ingredients:

4 duck breasts

2 cups milk

2 cups blackberries

1/4 cup honey

1/4 cup rice vinegar

1 Tbsp. garlic powder

1/2 Tbsp. ginger

3 rosemary sprigs

2 onions
Directions:

Marinate duck breasts in milk for ~ 2 hours

In a small pot, combine blackberries, honey, rice vinegar, garlic powder, and ginger over medium heat – stir occasionally until all ingredients are adequately combined and a semi-thick sauce has been established

Add rosemary sprigs and stir to add in additional flavor

In a medium pan, brown onions – reduce to medium-low heat when done

Heat grill and cook duck breasts to desired doneness – we grilled ours for 4 minutes/side

Heat onions to high and add duck breasts on top for ~ 1 minute each side

Plate breasts and top with blackberry sauce – enjoy!
