Bear meat has been given a bad rap, and in our opinion, it is definitely a misinterpretation of this delicious meat. We hope that you will feel so inclined to try this recipe with some bear meat of your own, and love it as much as we did!

Medium pan

9×13” baking dish
Ingredients:

6-8 bell peppers, cleaned of seeds

1/2 cup rice, cooked

2 Tbsp. olive oil
-
1 medium onion, chopped
-
2 cloves minced garlic
-
8 oz. tomato paste
-
1 lb. ground bear sausage
-
1 (14.5 oz. can) diced tomatoes
-
2 tsp. oregano
-
pinch of salt and pepper
-
1 cup shredded cheese
Directions:

Preheat oven to 400 degrees.

Cook rice per rice cooking instructions.

In a large skillet over medium heat, heat olive oil. Add in onion and cook until soft and translucent.

Stir in tomato paste and garlic, cook until fragrant.

Add ground bear sausage and cook until browned.

Add cooked rice to meat mixture and add in diced tomatoes. Stir well.

Add salt, pepper, and oregano to mixture, and combine well. Let simmer until mixture has reduced slightly, about 5 minutes.

Spray 9×13’’ baking dish with nonstick spray.

Stuff peppers with mixture and place tops on peppers, then place them in baking dish. Cover with foil.

Bake until peppers are tender, about 35 minutes. Uncover, add cheese, and bake additional 10 minutes until cheese is bubbly.
Peppers cleaned out.
